Hvorfor deltage til en af vores mange events, som vi løbende holder?

Er du interesseret i at lære om de fine detaljer og teknikkerne bag japanske køkkenknive og slibning? Så er denne workshop lige noget for dig! Du får muligheden for at lære fra en ekspert i branchen – Steffen, der er en af få ikke-japanere, der har gennemgået en slibeuddannelse i Japan hos master Keiichi Fujii i Sakai og arbejdet hos den anerkendte knivbutik og værksted Tower Knives Osaka. 

Han har over 10 års erfaring i knivbranchen i både Danmark og Japan, og tidligere har han også arbejdet som kok på nogle af Danmarks bedste restauranter. I løbet af workshoppen vil du få en grundig gennemgang af japanske knive, deres historie og de forskellige ståltyper. 

Steffen vil også lære dig om, hvorfor nogle knive ruster, hvorfor nogle ikke gøre, hvorfor nogle holder sig skarpe længere end andre og meget mere, og give dig værktøjerne til at undgå fejlkøb i fremtiden og bruge dine knive optimalt. Du vil også få en undervisning i slibning med fokus på double bevel, og Steffen vil personligt undervise og rette hver deltager for at opnå det bedste resultat. 

Du har mulighed for at medbringe dine egne slibesten og knive, ellers stiller Suba Knives sten til rådighed. Der vil være rigelig mulighed for at stille spørgsmål og udforske din nysgerrighed.

Sharpening workshop (English) 12th Feb.´23 - 18.00 – 20.00 ish

Now you can learn about Japanese kitchen knives and sharpening from an expert in the industry. Steffen is one of very few non-Japanese who has gone through the sharpening training in Japan, in his case under master Keiichi Fujii in Sakai and at the same time worked at the renowned knife shop and workshop Tower Knives Osaka. Now he is back in Denmark and is the founder of Suba Knives!

Steffen has over 10 years of experience in the knife industry in Denmark and Japan. Before that he worked as a chef at some of Denmark’s best restaurants, including Geranium.

This early evening, we will start with an overview of Japanese knives in general, a bit of history behind, and Steffen will teach about steel types, why some knives rust, and generally teach everyone all the basics about knives, so that you avoid making wrong purchases in the future and will be able to use your knives with the greatest possible success. That way, everyone has a basic knowledge that we can build on.

– After the first hour with general knowledge, Steffen will be teaching about Sharpening based on the double bevel and will go around and teach/correct each participant to get the best possible result. So regardless of whether you are a beginner or experienced, Steffen is more than happy to help you get better.

You are very welcome to bring your own whetstone if you have one, if not then Suba Knives will provide stones. You are also welcomed to bring a few knives with you, if not, you can borrow. That way you learn to sharpen AND get your own knives sharpened. That’s a win-win!

There will be plenty of opportunity to ask all your questions you might have about knives.

There is a maximum of 7 tickets, to maintain a good/personal level of teaching and the workshop will take around 2 hours.

This workshop will be held in English by request of some customers and is held at our workshop at Roskildevej 42b, Frederiksberg, Copenhagen. Price is dkr. 400 incl. VAT pr pers.
